Is it possible to add custom inventory fields to a custom invoice?

As an example, suppose I create a custom inventory tag called "Classification". Can I then add a tag <classification> to the <itemlist> section and have it included on the invoice?

Yes you can, just be sure that the cASe is correct. So if you have Classification as the custom item field, then the tag would be <Classification> (and not <classification>).
